    Characteristics

    We produce this vintage in small quantities. Since 1868, our mill has been offering this Monovarietal olive oil. From the 'Cailletier' variety, harvested on our estates, it has a very light taste and fine aromas. A little fiery at the beginning of the harvest. Ideal for raw vegetables​

    Extra virgin olive oil, cold extraction.​

    Color: almost translucent, slightly golden​

    Fragrance: dry grass​

    Taste: almond, artichoke

    Quality: extra virgin olive oil (EU)
    (Olive oil whose acidity level is less than 0.8°)

    This year, Nice olive oil has notes of dry and floral herbs on the nose.​

    In the mouth, we find almond, artichoke, broom flower, hay, notes of "pastry", ripe apple and dried fruits.​

    How to properly store your oil?​

    Conservation: Sheltered from light and heat. In the cellar or kitchen for the smallest containers for daily use. Olive oil, like wine, does not appreciate temperature changes. For example, prefer the lower cupboards in your kitchen or, remember to move your bottle of olive oil away from the window. Best before: 12 months

    Cuvée César - The tribute to the builder of the Moulin de la Madeleine​


    Son of Nice whitewashers, César Martin devoted his life to olive oil and the terroir that saw him grow. Guided by passion and courage, he took on a bold challenge: to revive the Moulin de la Santa from its ruins, before bringing the Moulin de la Madeleine back to life a few years later.​

    Under his patient hands and his builder's gaze, these forgotten places have once again become the beating heart of ancestral know-how.


    The Cuvée César pays tribute to this man of conviction, artisan of the renewal of Nice olive growing.​

    From exclusively from Cailletier olives, an emblematic variety of our region, this monovarietal oil reflects the whole spirit of its creator: authenticity, sweetness and perseverance.​

    Its notes of fresh almonds and ripe fruit recall the generosity of the Nice terroir and the passion of the one who knew how to transform a profession into a heritage.
